1. Authentic Paella Valenciana with Saffron
Paella Valenciana is Spain's most celebrated rice dish, born in the fields around Valencia and cooked over an open flame. Its signature is colour and aroma: a few threads of saffron turn the rice a deep, glowing gold and lend the whole pan its unmistakable perfume. Get the saffron right and everything else follows.
Ingredients (serves 4)
- 300g bomba or short-grain paella rice
- 400g chicken thighs, jointed (and 200g rabbit, if you can find it)
- 150g flat green beans, trimmed
- 100g butter (lima) beans
- 1 ripe tomato, grated
- 1 tsp sweet paprika
- A generous pinch of Luxury Tastes saffron threads
- 4 tbsp olive oil
- 1 litre hot chicken stock
- 1 sprig rosemary

Method
- Warm the olive oil in a wide paella pan and brown the chicken (and rabbit) on all sides. Season with Saffron Desert Salt.
- Push the meat to the edges, add the green beans and butter beans, then the grated tomato and paprika. Cook for 2–3 minutes until jammy.
- Pour in the hot stock, crush in the saffron, add the rosemary and simmer for 10 minutes.
- Scatter the rice evenly across the pan and spread it out. Do not stir again — this is the golden rule of paella.
- Cook over medium heat for 18–20 minutes until the liquid is absorbed. Turn the heat up for the final minute to form the prized socarrat, the caramelised crust at the base.
- Rest for 5 minutes under a clean cloth, then serve straight from the pan with lemon wedges.

Ingredients (serves 4)
- 320g carnaroli or arborio rice
- 1 small onion, finely chopped
- 30g beef marrow (optional) plus 60g butter
- 100ml dry white wine
- 1.2 litres hot beef or chicken stock

Method
- Soak the saffron in a ladleful of warm stock and set aside.
- Soften the onion gently in the marrow and half the butter until translucent.
- Add the rice and toast for 2 minutes until the grains turn glassy at the edges.
- Pour in the wine and let it evaporate.
- Add hot stock one ladle at a time, stirring, letting each addition absorb before the next. After about 12 minutes, stir in the saffron stock.
- Cook for 16–18 minutes total, until the rice is creamy but still has bite.
- Off the heat, beat in the remaining butter and the Parmesan — the mantecatura — until glossy. Season with Saffron Desert Salt and serve at once.

- 400g chopped tomatoes
- 1 strip of orange peel

Method
- Sweat the fennel, leek, onion and garlic in olive oil until soft.
- Add the tomatoes, orange peel and saffron, and cook for 5 minutes.
- Pour in the fish stock, bring to a gentle simmer and cook for 20 minutes to build the broth.
- Add the firmer fish first; after 4 minutes add the softer fish and shellfish. Cook until the mussels open and the fish is just set, about 5 minutes more.
- Season with Saffron Desert Salt. Serve the broth first with rouille toasts, then the fish.

Ingredients (makes 12)
- 500g strong white flour

- 250ml milk
- 100g butter
- 100g sugar
- 7g fast-action yeast
- 1 egg (plus 1 for glazing)
- Raisins, to decorate
Method
- Grind the saffron with a little sugar, then warm it with the milk and butter until the butter melts. Let the milk take on a deep gold colour. Cool to lukewarm.
- Combine the flour, sugar and yeast. Add the saffron milk and egg, and knead to a smooth, elastic dough — about 8 minutes.
- Cover and prove until doubled, roughly 1 hour.
- Divide into 12 pieces, roll each into a rope and curl both ends in opposite directions to form an S. Press a raisin into each curl.
- Prove for 30 minutes, brush with beaten egg, and bake at 220°C for 8–10 minutes until golden.

- 400g basmati rice

- 50g mixed nuts (almonds, pistachios, cashews)
- 30g raisins
Method
- Soak the rice for 30 minutes, then par-boil in plenty of water until three-quarters cooked. Drain.
- Warm the ghee and gently fry the cardamom, cloves and cinnamon until fragrant.
- Return the rice to the pan, add the sugar and the saffron milk, and fold gently to coat.
- Scatter over the nuts and raisins, cover tightly and steam on the lowest heat (dum) for 15 minutes until the sugar melts through and the rice is tender.

Method
- Warm the milk, cream and saffron together until steaming, then leave to infuse off the heat for 20 minutes so the saffron colours the cream.

- Return to the pan and cook gently, stirring, until the custard coats the back of a spoon. Do not boil.
- Cool completely, then chill for at least 4 hours.

Method
- Marinate the chicken in yoghurt, ginger-garlic paste, biryani spices and half the fried onions for at least an hour.
- Par-boil the soaked rice in salted water until 70% cooked, then drain.
- In a heavy pot, layer the marinated chicken, then the rice. Scatter over the remaining onions, herbs, ghee and the saffron milk.
- Cover tightly and cook on the lowest heat (dum) for 25 minutes, until the chicken is tender and the rice steamed through.
- Fold gently from the base to reveal the golden grains, and serve.

- Heat the ghee and fry the whole spices until fragrant. Add the lamb and brown well.

- Add a splash of water, cover, and simmer gently for 1½ hours until the lamb is tender.

Method
- Whisk the egg whites to stiff peaks, gradually adding the 150g sugar to make a firm meringue.
